Recipe: Coconut energy balls


These energy balls are fantastic as a little mid day treat. They are the better version of the cashew/fig balls I shared with you last month. These ones are even better for you and yummier. They have shredded coconut inside and out, flax seeds and you could even add chia seeds, all in all a burst of energy and goodness!

Ingredients

1/2 cup medjool dates
1/2 unsalted almonds
1/3 shredded coconut (you might need more to coat the balls)
1 tbsp flax seed

Instructions

Remove the stone from the dates and chop them roughly so they can be blended more easily. Add all the ingredients in the food processor or blender and pulse until all is well mixed. You will get a sticky mixture, with your hands make little balls. Place your coconut in a plate and coat your balls. 
Store in an air tight container and save in the fridge.
