Recipe: Focaccia bread

Bread is A-MAAAAZING. And homemade bread is even better, and hold on... focaccia bread is even MORE amazing! Not the easiest or quickest but definitely worth it, great if you have gyest over, they will surely be impressed. It can be stuffed with dried herbs, I used oregano, but works as well with cherry dried tomatoes or onions.

Ingredients

500 gr strong white bread flour
2 tsp salt
2 sachets of dried easy blend yeast
2 tbsp olive oil
400 ml cold water
olive oil for drizzling
Maldon sea salt for drizzling

Instructions

I used The Great British Bake off recipe for this and also watched the videos which are VERY useful (making the dough, shaping the bread, baking and tasting

Place the flour, yeast, salt, olive oil and 300 ml of the water in a large bowl, and gently stir either with your hand or with a wooden spoon to form a dough. Once formed kneel your dow for 5 minutes, gradually adding the remaining water. 
Stretch your dough by hand in the bowl and tuck the side into the centre, repeat for about 5 minutes. Here it's worth watching the video as visually it's a lot easier to grasp the technique. 
Oil a work surface and place your dough on it, knead for 5 more minutes.
Return the dough to your pre-oiled bowl and cover. Leave it for about 1 hour so the dough doubles its size. 

Oil your trays (or baking sheets) with olive oil (I used 2 Pyrex, one large and a medium one). Divide your dough accordingly so they fit nicely in each of your trays. Flatten the dough in the tray, pushing to the corners then leave to prove for 30 to 50 more minutes. 

Preheat the oven to 220ÂșC, drizzle the dough with olive oil and sea salt (now is the moment to put your tomatoes, dried herbs etc). Place in the oven and cook for 20 minutes.
Remove from oven and drizzle with MORE olive oil! Eat warm or cold, as good both ways!
