Make it: Tiramisu

Tiramisu is one of my fave deserts, it's tasty, scrumptious and if you want to make it super easy! Take a look at the how to and make sure to give it a go.

Serves 4
3 eggs
125gr of caster sugar (4.4oz)
1 mascarpone cheese pot (250 gr or 8.8 oz)
12 large ladyfingers
2 cups of coffee
Cocoa powder

Separate whites and yolks in 2 different bowls. Beat your whites vigorously (ideally with a mixer) to create a fluffy meringue. Once done set aside. 
Next, add your sugar to the yolks and beat until thick and pale (5 minutes with an electric mixer). Add the mascarpone cheese to the mix and keep beating until is all well mixed and smooth. Very carefully add the meringue, might be easier to mix it by hand. Once all mixed together set aside. 

Prepare your baking dish, can be a large one or individual pots like I did. In a shallow dish, add your espresso coffee and dip each ladyfinger in it very quickly. Don't let it soak too long or they will crumble. Place the ladyfingers in your dish. Make sure they cover all your dish/plate bottom, break them if needed. Once all your bottom is covered, spread evenly half of your mascarpone (if its a large dish) or enough to cover if its a small cup. Arrange your next layer of soaked ladyfingers and spread the rest of your mascarpone mix. 
Cover with plastic wrap and put in the fridge for at least 2 hours. 

When taking it out and before serving sprinkle cocoa powder on top. If you want to make it more adult friendly you can add some Marsala whine to your coffee or rum.
